Ingredients

Scale
  • 1 cup Heat-treated all-purpose flour (or almond flour)
  • 1/2 cup Plain Greek yogurt (thick variety like Fage works best)
  • 3 tablespoons Maple syrup or honey
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/3 cup Mini semi-sweet chocolate chips

Instructions

  1. Step 1: Prepare the Flour

If using all-purpose flour, place it in a microwave-safe bowl and heat in 30-second intervals until it reaches 160°F to ensure it is safe to eat raw. Sift the flour afterward to remove any clumps caused by the heating process.

  2. Step 2: Mix the Wet Ingredients

In a medium mixing bowl, whisk together the Greek yogurt, maple syrup, vanilla extract, and salt. Stir until the mixture is completely smooth and the sweetener is well incorporated.

  3. Step 3: Combine Dry and Wet

Slowly add the heat-treated flour (or almond flour) to the yogurt mixture. Use a spatula to fold the ingredients together until a thick, dough-like consistency forms. If the dough is too sticky, add another tablespoon of flour.

  4. Step 4: Add the Chocolate

Gently fold in the mini chocolate chips until they are evenly distributed throughout the dough. Using mini chips ensures you get chocolate in every single bite!

  5. Step 5: Shape into Bites

Using a small cookie scoop or a tablespoon, portion out the dough. Roll each piece between your palms to form a smooth ball. Place the bites on a parchment-lined plate or tray.

  6. Step 6: Chill and Set

Place the bites in the refrigerator for at least 30 minutes. Chilling allows the flavors to meld and helps the bites firm up to a perfect “fudge-like” texture.
