  • 1 large bag (approx. 13 oz) sturdy tortilla chips
  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon taco seasoning
  • 2 cups shredded Mexican blend cheese (or Cheddar and Monterey Jack)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup frozen corn, thawed
  • 1/2 cup Roma tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup pickled jalapeños (optional)
  • 1/4 cup fresh cilantro, chopped
  • Sour cream and guacamole for serving
  • Lime wedges for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup. This prevents the cheese from sticking to the pan.
  2. In a small bowl, toss your shredded cooked chicken with the taco seasoning and a splash of water or lime juice. This ensures the chicken is flavorful and doesn’t dry out in the oven.
  3. Spread half of the tortilla chips in an even layer on the prepared baking sheet. Sprinkle with half of the cheese, half of the seasoned chicken, half of the black beans, and half of the corn. Repeat with a second layer of chips and the remaining cheese, chicken, beans, and corn.
  4. Place the baking sheet in the oven and bake for 8 to 10 minutes, or until the cheese is completely melted and bubbling. Keep a close eye on them to ensure the chips don’t brown too much.
  5. Remove the tray from the oven. Immediately top with the diced tomatoes, red onions, and pickled jalapeños. Garnish with fresh cilantro and serve directly from the tray or transfer to a platter.
