6 large fresh jalapenos, halved lengthwise and seeded
1 cup cooked chicken, finely shredded or chopped
4 ounces cream cheese, softened to room temperature
1/2 cup sharp cheddar cheese, shredded
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper to taste
1 tablespoon fresh chives or green onions, chopped (optional for garnish)
6 slices of bacon, cut in half (optional for wrapping)
Instructions
Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper or a silicone mat. Wash the jalapenos and slice them in half lengthwise. Use a small spoon to scrape out the seeds and the white membranes.
In a medium-sized mixing bowl, combine the softened cream cheese, shredded chicken, cheddar cheese, garlic powder, and onion powder. Mix everything together with a spatula or spoon until the ingredients are well-combined and the mixture is smooth and creamy. Season with a pinch of salt and pepper to taste.
Using a spoon or a small spatula, fill each jalapeno half generously with the chicken and cheese mixture. Press the filling down slightly to make sure it stays in place. If you are using bacon, wrap a half-slice tightly around each stuffed pepper and secure it with a toothpick if necessary.
Place the stuffed jalapenos on your prepared baking sheet in a single layer. Slide them into the oven and bake for 18 to 20 minutes, or until the cheese is melted and bubbling and the peppers have softened. If you added bacon, you may want to broil them for the last 2 minutes to get the bacon extra crispy.
Remove the tray from the oven and let the poppers sit for about 5 minutes. This allows the cheese to set slightly so it doesn’t run everywhere when you take a bite. Garnish with fresh chives or green onions before serving warm.
