  • 1 large loaf of French or Italian bread
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup frozen spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. Slice the loaf of bread in half lengthwise and place both halves cut-side up on the prepared baking sheet.
  2. In a medium mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Stir until the mixture is smooth and creamy. Add the minced garlic, salt, black pepper, and red pepper flakes if you prefer a little kick.
  3. Fold in the squeezed-dry spinach and chopped artichoke hearts. Add 1 cup of the shredded mozzarella and all of the grated Parmesan cheese. Mix well until all ingredients are evenly distributed throughout the cream cheese base.
  4. Spread the spinach artichoke mixture generously over the cut sides of the bread halves. Use a spatula to ensure the mixture reaches all the way to the edges of the crust. Sprinkle the remaining 1 cup of mozzarella cheese evenly over the top of both halves.
  5. Place the baking sheet in the oven and bake for 12 to 15 minutes, or until the cheese is melted and bubbling. For a golden-brown finish, turn the broiler on for the last 1 or 2 minutes of cooking, watching closely to prevent burning.
  6. Remove the bread from the oven and let it rest for 5 minutes. This allows the creamy topping to set slightly so it does not slide off when you cut it. Use a serrated knife to slice the bread into 2-inch thick pieces and serve immediately.
