  • 2 lbs chicken wings (flats and drumettes separated)
  • 1 tablespoon baking powder (ensure it is aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh apple cider (not apple juice)
  • 1/4 cup packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional for a hint of heat)

Instructions

  1. Preheat your oven to 425°F (220°C). Pat the chicken wings completely dry with paper towels; this is crucial for crispiness. In a large bowl, toss the wings with the baking powder, salt, and black pepper until they are evenly coated.
  2. Place a wire rack over a large baking sheet lined with foil. Arrange the wings in a single layer on the rack. Bake for 35 to 40 minutes, flipping halfway through, until the skin is golden brown and very crispy.
  3. While the wings are baking, combine the apple cider, brown sugar, apple cider vinegar, Dijon mustard, cinnamon, and cayenne pepper in a medium saucepan. Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for about 20 minutes, or until the liquid has reduced to a thick, syrupy glaze that coats the back of a spoon.
  4. Once the wings are finished baking, transfer them to a clean large bowl. Pour the thickened apple cider glaze over the wings and toss gently with tongs until every wing is thoroughly coated in the sticky sauce.
  5. Optional but recommended: place the glazed wings back on the wire rack and return them to the oven under the broiler for 2-3 minutes. Keep a close eye on them to prevent burning. This step sets the glaze and creates extra sticky, caramelized edges.
