Maple Cinnamon Roasted Sweet Potatoes

  • 3 large sweet potatoes (peeled and cut into 1-inch cubes)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil (or melted coconut oil)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or silicone mats to prevent the maple syrup from sticking and to make cleanup much easier.
  2. Place the cubed sweet potatoes into a large mixing bowl. Drizzle the maple syrup and olive oil over the top. Sprinkle with the ground cinnamon, salt, and black pepper. Toss everything together until each cube is evenly coated in the mixture.
  3. Spread the seasoned sweet potatoes onto the prepared baking sheet in a single layer. Make sure the pieces are not crowded together, as this allows them to roast and crisp up rather than steam.
  4. Place the baking sheet in the oven and roast for 25 to 30 minutes. Halfway through the cooking time, use a spatula to toss the potatoes so they brown evenly on all sides. Roast until they are tender when pierced with a fork and the edges are lightly charred.
  5. Remove the pan from the oven and let the potatoes cool for a couple of minutes. Transfer to a serving dish and, if desired, drizzle with an extra teaspoon of maple syrup before serving warm.
