1.5 lbs boneless skinless chicken breast, cut into small bite-sized pieces

2 large Russet potatoes, peeled and cubed
4 cups corn kernels (fresh, frozen, or canned)

Instructions
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion, red bell pepper, and jalapeños. Sauté for about 5 to 7 minutes until the vegetables are softened and the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.
Add the cubed chicken pieces to the pot. Increase the heat slightly and cook until the chicken is browned on all sides. Stir in the cumin, smoked paprika, cayenne pepper, salt, and black pepper. Coating the chicken and vegetables in the dry spices at this stage helps toast the spices and releases their natural oils.
Pour in the chicken broth and add the cubed potatoes. Bring the mixture to a boil, then intermediate reduce the heat to low. Cover the pot and let it simmer for 15 to 20 minutes, or until the potatoes are fork-tender. The starch from the potatoes will naturally begin to thicken the broth during this time.
Stir in the corn kernels and the heavy cream. Let the chowder simmer uncovered for an additional 5 to 10 minutes. This allows the corn to heat through and the flavors to meld together perfectly. If you prefer a thicker chowder, you can lightly mash a few of the potato chunks against the side of the pot.
Taste the chowder and adjust the salt or cayenne pepper if needed. Remove the pot from the heat. The chowder is now ready to be served hot with your favorite toppings.
