Instructions
Step 1: Proof the Yeast In a large bowl or the bowl of a stand mixer, combine the warm milk, a tablespoon of the sugar, and the yeast. Stir gently and let it sit for about 5 to 10 minutes until it becomes foamy and bubbly.
Step 2: Combine Wet Ingredients Add the remaining sugar, pumpkin puree, egg, and melted butter to the yeast mixture. Whisk everything together until the mixture is smooth and the pumpkin is fully incorporated.
Step 3: Mix the Dough Add 2 cups of the flour, the salt, and the pumpkin pie spice. Stir with a wooden spoon or use the dough hook attachment on your mixer. Gradually add the remaining flour half a cup at a time until a soft dough forms that pulls away from the sides of the bowl.
Step 4: Kneading the Dough Knead the dough for about 5 to 7 minutes by hand on a floured surface, or 5 minutes in the stand mixer. The dough should be smooth, elastic, and slightly tacky but not sticky enough to cling to your fingers.
Step 5: First Rise Place the dough in a lightly greased bowl. Cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm, draft-free spot for about 60 to 90 minutes, or until it has doubled in size.
Step 6: Shape the Rolls Gently punch down the risen dough to release the air. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball and place them in a greased 9×13 inch baking pan.
Step 7: Second Rise Cover the pan and let the shaped rolls rise again for about 30 to 45 minutes. They should look puffy and be touching each other in the pan. During this time, preheat your oven to 350°F (175°C).
Step 8: Baking Bake the rolls for 18 to 22 minutes until they are lightly golden on top. If you like, brush the tops with a little extra melted butter immediately after taking them out of the oven for a beautiful shine.
