  • 2 large rectangular flatbreads or naan breads
  • 1 ½ cups cooked chicken breast, shredded or cubed
  • ½ cup of your favorite BBQ sauce
  • 2 tablespoons honey
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil (for brushing the edges)
  • Optional: Red pepper flakes for a little heat

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat to prevent sticking and ensure a quick cleanup. Place your flatbreads side-by-side on the prepared sheet.
  2. In a small bowl, whisk together the BBQ sauce and the honey until completely smooth. This simple step transforms standard bottled sauce into a gourmet glaze that coats the chicken and the bread perfectly.
  3. Take about 2 tablespoons of the honey BBQ mixture and toss it with your shredded cooked chicken in a separate bowl. This ensures every piece of meat is flavorful and stays moist during the baking process.
  4. Spread the remaining honey BBQ sauce evenly over the two flatbreads, leaving a small border around the edges. Sprinkle half of the mozzarella cheese over the sauce. Evenly distribute the BBQ-coated chicken and the sliced red onions over the cheese, then top with the remaining mozzarella.
  5. Brush the exposed edges of the flatbread with a little olive oil to help them brown. Place the baking sheet in the center rack of the oven and bake for 12 to 15 minutes, or until the cheese is melted and starts to turn golden brown and the edges are crisp.
  6. Remove the flatbreads from the oven and let them cool for 2-3 minutes. Sprinkle fresh chopped cilantro over the top. Use a pizza cutter or a sharp knife to slice the flatbreads into squares or triangles and serve immediately.
