  • 1.5 lbs Sirloin steak, cut into 1-inch cubes
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Red pepper flakes (optional)
  • 1 tablespoon Fresh parsley, chopped

Instructions

  1. Pat the steak cubes dry with a paper towel. This is crucial for getting a good sear. In a large bowl, toss the steak bites with salt, pepper, and olive oil until evenly coated.
  2. Heat a large skillet over medium-high heat. Once the pan is smoking slightly, add the steak bites in a single layer. Do not crowd the pan; work in batches if necessary. Sear for 2 minutes without moving them to develop a crust, then flip and cook for another 2 minutes until browned on all sides.
  3. Reduce the heat to medium. Add the butter to the skillet along with the minced garlic and red pepper flakes. Stir constantly for about 1 minute until the butter is melted and the garlic is fragrant.
  4. Toss the steak bites in the garlic butter until fully coated. Remove from heat immediately to prevent overcooking. Garnish with fresh parsley and serve warm.
