Start by patting the chicken breasts dry with paper towels. Season both sides of the chicken generously with salt, black pepper, and onion powder. This ensures the seasoning sticks and helps create a better sear in the pan.
Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts to the pan. Cook for about 5-7 minutes per side, or until they are golden brown and reach an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set it aside on a plate.
Reduce the heat to medium. In the same skillet, add the butter. Once melted, stir in the minced garlic, rosemary, and thyme. Sauté for about 1 minute until the garlic is fragrant, being careful not to let it burn.
Pour in the chicken broth or white wine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan—this is where all the flavor lives! Let the liquid simmer for 2 minutes to reduce slightly.
Add the chicken back into the skillet and spoon the herb butter sauce over the top. Let it warm through for another minute. Garnish with fresh parsley and serve with lemon wedges on the side for a bright finish.
