  • 1.5 lbs chicken breast, cut into 1-inch pieces
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)
  • 1/3 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sesame oil
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. Pat the chicken breast pieces dry with a paper towel. This is crucial for getting a good sear. Season the chicken pieces with salt and black pepper in a medium bowl.
  2. Place the cornstarch in one shallow bowl and the beaten eggs in another. Dip each chicken piece first into the egg, then dredge it through the cornstarch until fully coated. Shake off any excess powder.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer, making sure not to overcrowd the pan. Fry for 3-4 minutes per side until the exterior is golden brown and crispy. Remove the chicken and set it aside on a plate lined with paper towels.
  4. In the same pan (wipe out excess oil if necessary), add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Pour in the honey, soy sauce, rice vinegar, and sesame oil. Let the sauce simmer for 2-3 minutes until it begins to thicken into a syrupy glaze.
  5. Add the crispy chicken pieces back into the skillet with the sauce. Toss gently to ensure every piece is thoroughly coated in the glaze. Cook for an additional minute so the sauce sticks to the chicken. Remove from heat and garnish with sesame seeds and green onions.
