  • 12 oz Penne or Fettuccine pasta
  • 1 lb boneless skinless chicken breasts, sliced into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh baby spinach
  • 1.5 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Step 1: Boil the Pasta. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until it is “al dente.” Reserve about half a cup of pasta water, then drain the rest and set the pasta aside.
  2. Step 2: Season and Sear the Chicken. While the pasta cooks, season your chicken pieces with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside on a plate.
  3. Step 3: Sauté Aromatics and Veggies. In the same skillet, lower the heat to medium. Add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1-2 minutes until the garlic is fragrant. Add the fresh baby spinach and stir until it begins to wilt.
  4. Step 4: Create the Creamy Sauce. Pour the heavy cream into the skillet. Bring the mixture to a gentle simmer. Stir in the Parmesan cheese and red pepper flakes. Continue to whisk or stir until the cheese has melted and the sauce has thickened slightly.
  5. Step 5: Combine and Toss. Add the cooked chicken and the drained pasta back into the skillet. Toss everything together until the pasta is thoroughly coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  6. Step 6: Garnish and Serve. Taste the dish and add more salt or pepper if needed. Garnish with fresh chopped parsley and extra Parmesan cheese before serving warm.
