2 cans (15 oz each) black beans, drained and rinsed
1/2 green bell pepper, finely chopped
1/2 yellow onion, finely chopped
3 cloves garlic, minced
1 large egg (or flax egg for vegan)
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 cup breadcrumbs (panko or plain)
1/2 teaspoon salt

Instructions
Preheat your oven to 325°F (160°C). Spread the drained and rinsed beans onto a baking sheet lined with parchment paper. Bake for about 10-15 minutes until the beans look slightly cracked and dry. This step is crucial to prevent a mushy burger.
While the beans are drying, heat a small skillet over medium heat with a teaspoon of oil. Sauté the chopped bell pepper, onion, and garlic for about 5-6 minutes until softened. Blot away any excess moisture with a paper towel if the mixture seems too wet.
Place the dried beans in a large bowl. Mash them with a fork or a potato masher, leaving about one-third of the beans whole for texture. Add the sautéed vegetables, egg, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
Fold in the breadcrumbs. The mixture should be moist enough to hold together but not so sticky that it won’t release from your hands. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the moisture.
Divide the mixture into 4 equal portions. Roll them into balls and then flatten them into patties about 1 inch thick. Ensure the edges are smooth to prevent cracking during cooking.
You can bake the patties at 375°F (190°C) for 10 minutes per side. Alternatively, pan-fry them in a lightly oiled skillet over medium heat for 4-5 minutes per side until a golden-brown crust forms.
