  • 1.5 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced into rounds
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 3/4 cup pearl barley, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the beef cubes dry with a paper towel and season them generously with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches, browning all sides until a deep crust forms. Remove the beef and set it aside on a plate.
  2. In the same pot, add the onion, carrots, and celery. Cook for about 5 to 7 minutes until the onions become translucent. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
  3. Pour in a splash of the beef broth to deglaze the pot, scraping up all the brown bits from the bottom with a wooden spoon. Add the browned beef back into the pot along with the remaining beef broth, diced tomatoes, Worcestershire sauce, thyme, rosemary, and bay leaves.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for about 45 minutes. This allows the beef to begin softening before the barley is added.
  5. Stir in the rinsed pearl barley. Cover the pot again and continue simmering for another 40 to 50 minutes, or until both the beef and the barley are tender. If the soup becomes too thick, you can add an extra cup of broth or water.
  6. Remove the bay leaves and discard them. Taste the soup and add more salt or pepper if needed. Ladle the hot soup into bowls and garnish with fresh chopped parsley before serving.
