Step 1: Mix the Chicken Base In a large mixing bowl, combine the ground chicken, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Use your hands or a fork to gently mix the ingredients until just combined. Do not overmix, as this can make the patties tough.
Step 2: Shape the Patties Divide the chicken mixture into four equal portions. Shape each portion into a patty about 3/4-inch thick. Make a small indentation in the center of each patty with your thumb to help them cook evenly and stay flat on the bun.
Step 3: Prepare the Glaze In a small bowl, whisk together the BBQ sauce and the honey until the mixture is smooth. Set this aside, as you will use it during the final stages of cooking to create that delicious, sticky coating.
Step 4: Cook the Patties Heat olive oil in a large skillet over medium-high heat, or preheat your grill. Place the patties in the pan or on the grates. Cook for about 5 to 6 minutes on the first side until a golden-brown crust forms.
Step 5: Apply the Glaze Flip the burgers over. Generously brush the cooked side of each patty with the honey BBQ glaze. Cook for another 4 to 5 minutes. During the last minute of cooking, flip the patties once more and brush the other side with glaze, allowing it to bubble and caramelize slightly. Ensure the internal temperature reaches 165°F (74°C).
Step 6: Toast and Assemble While the meat rests for a minute, lightly toast your burger buns. Place a patty on each bottom bun, add your desired toppings like lettuce and onions, and drizzle any remaining glaze on top before closing the burger.
