  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1/4 cup milk or almond milk
  • 1/2 cup powdered sugar (for the glaze)
  • 2 tablespoons pure maple syrup (for the glaze)
  • 1 tablespoon heavy cream or milk (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan with cooking spray or butter. You can also line the pan with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice. Ensure there are no large clumps of spices remaining so the flavor is evenly distributed.
  3. In a large mixing bowl, beat the eggs with the granulated sugar and brown sugar until the mixture is light and fluffy. Whisk in the oil, pumpkin puree, and milk until the wet mixture is completely smooth and combined.
  4. Gently fold the dry ingredients into the wet ingredients using a spatula. Mix just until no streaks of flour remain. Be careful not to overmix, as this can make the bread tough and dense.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55 to 65 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with just a few moist crumbs.
  6. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. While the bread cools, whisk together the powdered sugar, maple syrup, and cream until smooth. Drizzle the glaze generously over the slightly warm or fully cooled bread.
