  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 4 large Granny Smith apples, peeled, cored, and thinly sliced
  • 2 tablespoons all-purpose flour (for filling)
  • 1/2 cup granulated sugar (for filling)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/2 cup rolled oats (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch square baking pan with parchment paper, leaving an overhang on the sides so you can easily lift the bars out once they are cooled.
  2. In a large bowl, whisk together 2 cups of flour, 1/2 cup sugar, and salt. Use a pastry cutter or your fingers to work the cold, cubed butter into the flour until the mixture resembles coarse crumbs. Set aside 1 cup of this mixture for the topping.
  3. Take the remaining flour and butter mixture and press it firmly into the bottom of your prepared baking pan. Make sure it is an even layer. Bake this crust for 12-15 minutes until it is just starting to set.
  4. While the crust is pre-baking, toss your sliced apples with the lemon juice, 1/2 cup sugar, 2 tablespoons of flour, cinnamon, and nutmeg in a large bowl. Ensure every apple slice is well-coated in the spices.
  5. Spread the apple mixture evenly over the pre-baked crust. If you like extra crunch, mix the reserved 1 cup of dough with the rolled oats, then sprinkle this crumble mixture over the top of the apples.
  6. Place the pan back in the oven and bake for 30-35 minutes. The topping should be golden brown and the apple filling should be bubbling slightly around the edges.
  7. Remove the pan from the oven and let it cool completely on a wire rack. This is crucial as the bars need time to set. Once cooled, lift them out using the parchment paper and slice into 16 squares.
