  • 1 ½ cups apple cider (reduced to ½ cup)
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • For the topping: ½ cup granulated sugar mixed with 1 tablespoon cinnamon and 3 tablespoons melted butter

Instructions

  1. In a small saucepan over medium-high heat, simmer the apple cider until it reduces to exactly ½ cup. This should take about 10 to 15 minutes. Set it aside to cool slightly before using in the batter.
  2. Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick cooking spray or a little bit of melted butter to ensure the donuts release easily after baking.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined and free of lumps.
  4. In a separate medium bowl, whisk together the reduced apple cider, egg, melted butter, buttermilk, and vanilla extract until the mixture is smooth.
  5. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined. Be careful not to overmix, as this can make the donuts tough.
  6. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full. You can also use a piping bag or a zip-top bag with the corner snipped off for a cleaner fill.
  7. Bake for 12 to 15 minutes, or until the donuts are golden brown and spring back when lightly touched. Let them cool in the pan for 5 minutes before transferring them to a wire rack.
  8. While the donuts are still warm, brush them lightly with melted butter. Toss each donut in the cinnamon-sugar mixture until evenly coated on all sides.
