  • 1 tablespoon maple syrup or honey
  • 1 teaspoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Step 1: Combine Dry Ingredients: In a glass jar or a sealable container, add the rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt. Stir these dry ingredients together briefly to ensure the spices and seeds are evenly distributed through the oats.
  2. Step 2: Add Wet Ingredients: Pour in your choice of milk, the pumpkin puree, maple syrup, and vanilla extract. Use a spoon to stir the mixture thoroughly. Make sure you scrape the bottom of the jar to incorporate any dry oats that might be hiding there.
  3. Step 3: Seal and Refrigerate: Once the mixture is well combined, tightly close the lid of your container. Place the jar in the refrigerator for at least 6 hours, though leaving it overnight is best for the creamiest texture. During this time, the oats and chia seeds will absorb the liquid and soften.
  4. Step 4: Final Stir and Serve: In the morning, remove the jar from the fridge and give the oats a good stir. If the mixture seems too thick, you can splash in a little extra milk to reach your desired consistency. Add your favorite toppings and enjoy!
